How to Cook Yucca Spanish Root

Ingredients:

  • 1 lb yucca root
  • water
  • salt
  • vegetable oil
  • butter
  • 1 cup flour
  • garlic
  • onion
  • cheddar cheese
  • two eggs
  • sharp knife
  • grater
  • potato masher

Steps:

  • Boiled yucca: take a sharp knife, and peel the yucca until you start seeing the white flesh. Take out the thick fibers that you see in the middle. Cut the yucca into medium sized chunks.
  • Put the chunks in a vessel of boiling water and add a pinch of salt in water. Allow it to cook for 20 minutes until the yucca is soft and tender. If you are boiling frozen yucca, then it may take some more time to boil. Make sure that you do not overcook the yucca or it will be mushy.
  • Take the yucca out of water. Place it in a colander and drain it. Cut it into thin slices. Allow it to cool for sometime. Sprinkle yucca with some onions and garlic sautéed in vegetable oil or butter.
  • Serve the boiled yucca warm. Boiled yucca is great as a side dish with fish, steak or chicken.
  • Cassava Fries: boil yucca in the similar manner as mentioned above. After boiling pat it dry with some paper towels.
  • Cut the boiled yucca into very thin slices, about the size of fries.
  • Take 1/4 cup of oil in a pan and heat it. Put the yucca slices in the oil and fry them until they are golden brown. Ensure that the oil does not smoke. Once the yucca is cooked, take it out from oil, and drain the excess oil on a paper towel.
  • Season the yucca fries with pepper and salt. Now you can serve yucca fries as a side dish with steak or burger.
  • Cassava Cheese Balls or Dominican Bollitos de yucca: take 1/2 lb of cheddar cheese and grate it or you can cut it into thin strips and keep it aside.
  • Cut, peel and boil 1 lb of yucca for about 20 minutes. Take the yucca out of water and mash it with a potato masher. Add 2 tbsp of butter, 2 eggs and salt to taste. Mix all these ingredients properly. Let it cool at room temperature.
  • Put 2 tsp of this mixture in your hand, if the dough is sticky, and then cover it with some flour. Flatten the dough properly and put some cheese in the middle. Roll the mixture in the form of balls. Set it aside for an hour.
  • Keep 1 cup of flour on a tray or plate. Cover the balls in flour properly, shake the excess flour out, and deep-fry it in hot oil until they are golden brown. Ensure that the oil does not smoke. Drain the excess oil with paper towels.
  • Serve hot as a snack or appetizer.

  • 1/4 celery seed
  • 3 c. chicken stock

Steps:

  • Start by preheating the oven to 350 degreed F. Take the bread cubes and put them in a large mixing bowl. Place a frying pan on the stove on medium heat.  Add some butter and melt it. Add onion and celery, sauté them for about four minutes.
  • Add the onion and celery mixture to the bread cubes. Add eggs, chicken stock, celery seed, salt, pepper and pecans to the bread cubes.
  • Toss this mixture properly with your hand and pour it in a buttered 9×13 inch baking dish. Cover the entire dish with an aluminum foil and then bake it for 20 minutes.
  • Once you have placed the baking dish in the oven, raise the temperature to 400 degrees F. After 20 minutes, remove the foil from the dish and bake it for another 20 minutes or until the stuffing is brown and crisp. 

How to Cook Lobster Stuffing

Ingredients:

  • 1 cup lobster meat cooked
  • 3/4 stick butter
  • 3 cloves garlic, minced
  • 1 or 2 shallots, minced
  • 2 green onion, chopped
  • 1 cup bread crumbs
  • 2 tbsp parsley, chopped
  • 1/2 tsp paprika
  • 2 stalks celery, minced
  • 1 red sweet thin walled pepper
  • 1/2 black pepper
  • 1 egg
  • 1/4 fresh thyme
  • 1/4 rubbed sage
  • 1/4 tsp salt

Steps:

  • Mince and peel the onions, shallot and garlic. Take the celery and mince it finely. Take a large cube of butter and place it in the saucepan. Saute green onion, shallots, pepper and celery. When the mixture becomes translucent, add garlic to it. Saute for another minute, and add one more cube of butter and breadcrumbs. Stir this mixture and add more butter if required. After this, add egg to this mixture and mix it properly.
  • When the mixture is cooked, put in the lobster meat and stir it. Split the lobster into half and add this mixture into the lobster before baking.
  • Sprinkle some paprika and butter on the top. Broil it for 10 minutes on 450 degrees F, or until the top is brown in color.

Drumstick Dry Vegetable

Ingredients:

  • 3 drumsticks
  • 1tsp mustard seeds
  • 1/4 tsp asafetida powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp methi seeds
  • 1/2 tsp garam masala powder
  • 1 cup grated coconut
  • marble size tamrind
  • 1tsp jaggery
  • 1 and a half tsp chilli powder

Steps:

  • Peel the drumsticks and cut them in approximately 3 inch pieces. Take some cooking oil and heat it in a vessel. Add some mustard seeds, when they start cracking add methi seeds, asafetida and drumsticks.
  • Pour one cup of water in the vessel and cook it for 10 minutes or until the drumsticks are soft.
  • Take coconut, chilli powder, garam masala powder, turmeric powder and tamarind, and grind them together to form a rough paste.
  • Add this paste to the prepared drumsticks and add some water, make sure that you do not add a lot of water. The paste will automatically stick to the drumsticks.
  • Add some salt and jaggery to the drumsticks and let it cook for three minutes. Now it is ready to serve. You can have it with rice, chapatti or pita bread. 

Drumsticks Curry

Ingredients:

  • 4 drumsticks
  • 100g onions, chopped
  • 50g green peas
  • 25g green chilies
  • 1 small bunch of cilantro
  • 1 tsp ginger garlic paste
  • salt
  • 3 tsp sesame seeds (fine powder)
  • 2 cups yoghurt
  • 50 g oil
  • 2-3 sprigs leaves
  • a pinch of turmeric

Steps:

  • Soak some green peas for a few hours in water. Cut the drumsticks into 2-inch pieces. Heat some oil in the pan and sauté the onions till they are golden brown.
  • Put some ginger-garlic paste and fry the onions for a minute. Then add green peas, drumstick pieces, turmeric powder, curry leaves and salt. Cook it for 5 minutes and cover it with a lid.
  • Take the green chilies and cilantro, and blend them together to form a fine paste. Add this paste to the curry and cook for sometime. Add some sesame seed powder and mix it properly.
  • Afterwards, add yoghurt and cook for another 15 minutes or until the curry is prepared. Garnish it with cilantro leaves and serve hot.

  • 1 gallon of cactus tuna (pear apples)
  • 3 cup juice
  • 1/2 cup lemon juice
  • 1 box of fruit pectin (sure jell)
  • 6 cups of sugar

Steps:

  • Take nearly 1 gallon of cactus tune (pear apples), carefully burn the stickers from each of them with the help of candle flame or torch. Take the tuna, scrape out the burned stickers residue from the fruit by using a sharp knife.
  • Now you can easily peel the fruit, make sure that you use rubber gloves or the juice from the fruit will turn your hands purple. Cut the peeled tuna into quarters, keep them in a saucepan with seeds, and pour some water.  
  • Bring the water to boil, cover the saucepan and let it cook for at least one hour. Strain the juice from the pulp and seeds and add 3 cups of juice, 1/2 cup lemon juice and 1 box of fruit pectin.
  • Let this mixture boil and then add 6 cups of sugar and let it cook for three minutes. Take it out from heat and let it cool for 45 minutes. Skim the foam and pour the jelly in some sterilized jars.
  • Immediately seal the jars with canning lids, or you can allow the jelly to set and then cover it with melted paraffin.

How to cook Nopalitos Con Chili (Prickly Pears)

Ingredients:

  • 4 sm. Nopalitos (should be in 5 inch in diameter, top sprouts of prickly pear cactus)
  • 3/4 lb chuck
  • 1 tbsp vegetable oil
  • 1 medium sized onion chopped
  • 1/4 cup chopped green pepper
  • 1 clove garlic minced
  • 1 tbsp chili powder
  • 1 cup tomato puree
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 leaf oregano, crumbled
  • 1 can kidney beans (optional)

Steps:

  • Wash the nopalitos carefully and look out for small thorns; you can use a potato peeler to remove the thorns. Cut the nopalitos into small cubes, wash and drain them. Set it aside.
  • Cut 1/2 inch cubes of steak and take a large skillet, pour some oil. Put the steak cubes in the skillet and remove them once they are brown in color. Add onion, garlic and green pepper, and sauté it while stirring continuously. Add nopalitos to the mixture, and cook for 3 minutes. Add little chili powder over the mixture and cook for another minute.
  • Place the steak cubes in the skillet again. Add tomatoes, oregano, salt, water and bring it to boil. Lower the heat, cover the skillet with a lid, and cook for 30 minutes.
  • Now it is ready to serve. Serve hot.

How to Cook Stuffed Cabbage

The cabbage is a green leafy vegetable, which comes from Brassicaceae ancestors. Cabbage can be classified into three groups, i.e. herbaceous, dicotyledonous flowering plant, and biennial. It has a packed mass of leaves on its stem. Cabbage is generally green in color, but some genuses have red and purplish color as well.

The cabbage plant is also termed as heading cabbage or head cabbage. It is also known as abowail in Scotland, because of its round shape. In British English, cabbage is infrequently termed as “a loaf”.

Cabbage leaves usually exhibit a subtle, crumbly, waxy coating, which is termed as bloom.  The acidic or sour flavor which is present in cabbage is because of ‘glucosinolate’.  Cabbages are a rich source of vitamin B2 i.e. “riboflavin”.  If you want to cook stuffed cabbage, then just follow the following instructions.

Things required:

  • 2 Large head of cabbage
  • 3 Cups cooked rice
  • 2 Large onion, minced
  • 2 Pound ground beef
  • 1 Pound ground pork
  • 1 Pound ground veal
  • 2 Large can tomatoes
  • Ham or bacon, whichever you have on hand
  • Salt and pepper
  • Sharp paring knife
  • Large pot or slow cooker

Instructions:

  • To cook stuffed cabbage, at first you will have to core the cabbage thoroughly before boiling it. Never eliminate the outer leaves of the cabbage. Now, boil the whole cabbage in a big container and add about four inches of water in it. When leaves become soft then transfer them into the larger vessel. If you are boiling the whole cabbage, then it will be around thirty to forty minutes. Remember the leaves of the cabbage should be soft after boiling, not soggy. Allow cabbage to cool down for few minutes, and after that peel the wide base of the cabbage leaf with the help of a paring knife.  Discard the hard outer leaves of the cabbage.
  • Now, mix ripe rice and chopped onion with ground beef, meat or pork. If you are not having one pound of ground meat, then you can also use another one pound of ground pork. The blend should be of around 3 pounds of meat. It is not suggested to done using ground beef alone, because it will be hard to cook. Add some spices to the mixture, like salt pepper and stir well. If the ham, which you are using, is salty then just decrease the quantity of salt in the mixture of meat.
  • Place roughly one cup of the meat combination at the bottom of a leaf. Roll the combination in the leaf two times, then crease the edges of the leaves and keep rolling. After that, put the completed roll at the base of a large vessel or in a cooker on low flame. Keep doing this until the entire cabbage and meat combination have been finished.
  • Now, place the tomatoes on the stuffed cabbage, scattering them uniformly. Put ham or bacon pieces over the stuffed cabbage and coat them by using the hard outer leaves of the cabbage, which you have put aside. Put the lid on the cooker properly.
  • Boil the cabbage rolls for some time, and then lessen the temperature to a low flame. Cook for just about 3 hours, depending on the amount of the rolls you have prepared.

Tips and Warnings:

  • Prepare the quantity of meat combination according to the mass of the cabbage leaf; stuff it to set aside for rolling.
  • If you want, you can replace ham and bacon by kielbasa for your stuffed cabbage dish.

  • You should never thaw the frozen shrimp in hot water, in warm water, or in the oven, because it will cook your meat partly and will make it hard. The odor of the shrimp should be like sea water or sir without hint of ammonia or acid.
  • After thawing the shrimp, discard the heads of the meat, remove the legs, and carefully take away the shell of the shrimp.

De-veining:

Once you discarded the shell, form a thin slice laterally down the exterior arc of the body. The dark string running laterally along the back of the shrimp is the intestine. Take out the vein with the help of your utensil or finger. Now wash the shrimp under running chilly water.

Cooking instructions:

Boiling:

To cook shrimp, at first you will have to boil the meat, this is the most common technique of cooking frozen shrimp. Boil water  around 5 cups per pound.

When the shrimp is cooked completely, the meat will turn transparent and its skin will become light orange and drift on the top. Remove the shrimp from stove instantly and keep in ice. The cooking time of the shrimp differs from two to four minutes, totally depends on the mass of the meat. Now, put some spices and flavored liquids into the boiling water as preferred.

Steaming:

Get a large vessel with a cap or any steaming basket. When the water starts simmering, turn the temperature as low as you can, keep the shrimp filled container in the vessel, and then cover and cook until the meat of the shrimp becomes transparent and the skin or shield becomes light orange or pink. After that, take out the shrimp instantly and keep it in ice. Now, put some spices and flavored liquids to boiling water as per your preference.

Broiling or Baking:

  • You can now take off the pork from the oven. Once the pork tenderloin is cooked, take it out from the oven and keep the tenderloin on a chopping board. Coat it with tin foil and let it cool for ten to fifteen minutes.
  • Now, you will have to cut the pork tenderloin. Carve the pork into little medallions and keep it on the plates. Add a small quantity of the broth over every serving and enjoy.
