How to Cook Frog Legs

Frog legs are one of the best-known delicacies of Cantonese and French cuisine. People from some other regions also eat frog legs like Caribbean, Alentejo, Greece, Piemonte and other regions of US. The kind of frog used for this dish is known as the edible frog. It is said that the edible frog tastes like chicken due to its mild flavor, and the texture similar to chicken wings. These frogs are commercially raised in some countries such as Vietnam. The frog muscles do not resolve the rigor mortis as quickly as other warm-blooded animals, so the heat from cooking causes the frog leg to twitch.
How to Cook Frog Legs
They are used in many cuisines like:

  • French Cuisine: In the French cuisine, the frog legs are prepared with garlic, butter and parsley sauce, and are usually served with salad or steamed rice. Only the upper joint of the hind leg is served.
  • Chinese Cuisine: in the Chinese cuisine, frog legs are stir-fried and are combined with light spices, stewed rice.  It is eaten boneless.
  • Indonesian Cuisine: the frog leg soup in Indonesian cuisine is known as swikee or sweekee. Swikee is a frog leg soup made with strong garlic, ginger, and fermented Soya beans, which is served with parsley or celery leaves.
  • Indian Cuisine: frog legs are a delicacy in Kerela. They are usually served in fried form.

Here are some easy steps on how to cook frog legs

Ingredients:

  • 5lbs of frog legs, rinsed and cleaned
  • deep fryer
  • vegetable oil
  • 2 1/2 cups of Italian bread crumbs
  • 1tsp garlic salt
  • 1tsp black pepper
  • 4 raw eggs

Steps:

  • Start by making a bread coating. Take Italian breadcrumbs, black pepper and salt, and mix it in a bowl. With the help of your fingers, mix all these ingredients.
  • Take eggs and crack them, put it in a separate bowl. Take a fork, break the yokes, and mix it properly.
  • Take some vegetable oil and pour it in the deep fryer. Sometimes, there is a fill indicator in the fryer to inform you how much to put in. Now, increase the heat on the deep fryer and keep it on medium heat.
  • Take the frog legs and place them in the mixture of eggs. Mix them properly and then roll them in breadcrumbs.
  • After they are covered in breadcrumbs, put them in the deep fryer. Allow it to cook for 5-10 minutes. Once they turn golden brown, they are done.  Take it out from the deep fryer and let it cool. Now they are ready to serve.

How to Cook Frog legs French Style

Ingredients: (For the first batch)

  • 20 small frog legs
  • 1 cup flour
  • 4 tbsp butter
  • 3 garlic cloves
  • 4 tbsp fresh parsley (chopped)
  • 2 tbsp fresh basil (chopped)
  • 2 tbsp fresh chives ( chopped)
  • 2 tbsp fresh tarragon (chopped)
  • 1/2 cup calvados (apple brandy, warmed)
  • 1/2 cup dry white wine
  • 1/4 cup sour cream
  • 4 tbsp capers
  • 1/4 Worcestershire sauce

Steps:

  • Dry the frog legs properly and sprinkle little flour on each one. Take a saucepan and pour some brandy in it. Make sure that you keep the pan on low heat.
  • Carefully fry the frog legs in butter. Add some garlic and sauté it for sometime; turn the frog legs after every two minutes.
  • Add some herbs to it, take it out from the heat, and add some warm brandy. Keep the pan on heat again.
  • Shake the pan to mix it evenly, and then add little white wine. Cook it on a low heat for another four minutes.
  • Season it with pepper and salt. Add some sour cream, Worcestershire sauce, some more white wine and capers.
  • Now serve it with some bread and wine.
