How to Cook Venison

Venison is a kind of animal meat. It belongs to Cervidae ancestors. Deer meat is usually known as venison. Venison is generally defined as the mutton of any animal, killed by hunting. Earlier, venison was associated with any animal from the Cervidae, Leporidae, Suidae, and Capra genetic groups. In Southern Africa, venison is referred to as the meat of ‘Antelope’.

Venison can be consumed as steaks, jerky, minced meat, tournedos, roasts, and sausages. The taste of the venison is quite similar to beef. Venison has the finest texture and is leaner than similar pieces of beef. Venison can be cooked only on medium temperature, or else it will become hard.

Venison is a popular meat because it contains low fat. Venison is easily available and it is cheaper than beef. Venison is highly popular in US, Mid-south, Midwest, and Appalachia.  Venison jerky is available in grocery stores, can be ordered from Internet, and it is also served in some airlines. Things required:

  • Roasting pan
  • Dutch oven
  • Slow cooker
  • Meat thermometer
  • In the Oven

Procedures:

  • To cook venison, first of all purchase fresh venison meat from your nearest grocery store. Rinse it well. Season your venison with salt and pepper, and put the venison meat in the roasting pan. You can also use some other herbs. If you want, you can add rosemary, powered onion, thymes and garlic. You can also use beef barbecue rubs on the venison meat to season it.
  • Now, preheat your oven to 359 degrees temperature.
  • Cook the meat. Cook it uncovered and without adding any extra liquid in the venison meat. Cook it for almost 30 minutes or until the internal temperature of the meat reaches 180 degrees Fahrenheit.

Braising in a Dutch oven or Slow Cooker

  • If you want to cook venison with this method, then season your venison meat and put it in a Dutch oven or in slow cooker. If the venison meat contains bones, then place the meat in pan bone-side down.
  • Now, add 2 cups of water in the vessel. You can also include 2 cups of beef soup, wine or apple juice.
  • Cover the vessel and cook it for more than 2 hours on medium-low temperature, on stovetop. If you are cooking your venison in a slow cooker, then you will have to cook it for more than 7 hours. Examine the heat of the meat at the thickest segment. The venison meat is cooked and can be served, once the meat thermometer achieves 180 degrees F temperature.

Tips and Warnings:

  • While serving venison meat, cut the meat across the grain in small pieces. This method will produce shorter fibers of the meat, and the venison will be tendered.
  • The Department of Agriculture suggests cooking most pieces of venison to almost 180 degrees F to destroy any parasites or bacteria which is present in the meat. Ground venison must be cooked to 175 degrees F.
  • If you want to add extra flavor in the venison meat, place bacon strips on the top of the venison meat while cooking. You can use bacon strips with any kind of venison recipe.
  • If you want to heat the leftovers of venison meat, then reheat it on a temperature of 175 degree Fahrenheit.
