The modern waffle has evolved from wafers. A waffle consists of batter or dough based cake which is then cooked in a waffle iron and is patterned to give it a distinctive shape. There are hundreds of variations of waffles based on the type and shape of the iron used and the recipe applied. Examples of different kinds of waffles include American waffles, which are made from a batter leavened with baking powder, Brussels waffles, which are prepared with a batter leavened with yeast, Hong Kong style waffles etc. In this article we will understand the process of making this delicious snack at home.

Ingredients required:
- 2 cups of unbleached, all-purpose or pastry or cake flour. Do not use bread flour
- waffle iron
- 2 teaspoons of baking powder
- 2 tablespoons of sugar
- salt to taste
- 5 eggs
- 1 and 1/2 cups of milk
- 5 tablespoons of melted butter. Using oil instead will make your waffles crispier
- 2 teaspoons of your favorite flavoring

Method:
Heat the waffle iron. Put a drop of water on the plates of the waffle to check if its hot enough. It should sizzle and evaporate within 3-5 seconds, if not your waffle iron isn’t hot enough yet. Meanwhile mix together all your dry ingredients, that is flour, salt, sugar and baking powder in a large mixing bowl. Break your eggs in an egg separator and carefully pour out only the whites in a bowl. Make sure you do not get any of the yolk in with the whites. Any amount of yolk would hamper the whites from foaming properly. Now beat the egg whites till its smooth. Add the butter or oil, depending on what you picked, and add it to the egg whites. Once done add milk to it.
Beat the egg white mixture till its whipped into a foam. You can also use an eggbeater if you have one. Make a pit in the dry ingredient mixture. Pour in the egg yolk mixture. Now mix everything together. Keep stirring till everything is moist and make sure there are no lumps and / or any dry spots in the flour. Once completed add the egg whites to this batter and stir till its fairly consistent. Do not over mix. Now let the batter rest for about 5-10 minutes.
Take some oil and apply it to the top and bottom plates of your waffle iron to avoid it from sticking. Gently pour in the batter on the waffle iron. Do not use a lot of batter as you do not want to batter to spill out. Waffles will puff up as they cook so be on the safer side and pour in a little less than the full capacity. Close the lid of the waffle iron and wait for the waffle to be ready. Do not press down the lid. It will take about 2 minutes for the waffle to form. Keep an eye on the steam, it will reduce once the waffles are ready. Once you get a little more experienced making waffles, your timings will improve. Do not open the waffle iron unless absolutely necessary as this could lead to uneven cooking. If you do open and the waffles look too pale, give it another minute or so.
Thats it, you are done. Remove the waffle carefully with a spatula. Serve with hot butter and maple syrup or with your favorite topping.
