How to Cook Jicama

Jicama is a type of Mexican potato or turnip. The tan root of a tropical vine, jicama is native to Central America and can grow up to 5 pounds, though we never see any that large here. It has a turnip-like shape and light tan skin that must be peeled. The flesh is white, delicately sweet and crisp, like raw potato or a crunchy pear, making it excellent for eating raw in salads and eaten as a snack.

Buying and storing: Look for firm, un-shriveled specimens that are somewhat heavy for their size. Store in a cool, dry spot (the fridge is fine); it will keep for as long as a month.

Preparation Method: Peel using a vegetable peeler or paring knife, then you can chop, slice, or shred. Best cooking methods: It is best raw; broiling, sauteing or stir-frying is also nice. It is completely cooked when you find the outer crust crunchy. Other vegetables that can be used as substitutes are radish, cucumber or water chestnuts.

Things Required:

  • 1-tablespoon neutral oil, like grape seed or corn
  • Juice and zest of 1 lime
  • 1-teaspoon chili powder
  • 1-teaspoon sugar (optional)

  • 1-pound jicama, peeled and cut into sticks (like French
  • Fries)

Steps:

  • Mix the oil, juice, zest, chili powder, sugar and a pinch of salt in a large bowl. Add the jicama and toss until well coated. Heat the broiler and adjust the rack to 4 inches away from the heat source.
  • Put the jicama on a piece of foil on a baking sheet (cleanup is much easier with foil); make a single layer and leave a bit of space between the sticks. Broil the jicama until it starts to brown (for about 4 minutes). Serve hot or at room temperature.
