Before you boil

  • First, you will have to practice egg safety. Boiled eggs whether mollet, hard or soft are just one of the various ways of cooking the eggs. However, there are certain things you must know before you start boiling an egg.
  • Always remember that eggshells are porous and can easily absorb odors from the surrounding foods, so you will have to store them in airtight containers inside the fridge. Eggshells are barriers for bacteria and you will have to protect them from bacteria as well. Broken or cracked eggs must be thrown away, always use a fresh egg.

Recognizing fresh eggs

  • You will have to test the eggs for their freshness. If you are not certain about the freshness of the eggs, then you must test if they are fresh or not. Keep an egg inside a glass of water. A fresh egg will immediately sink at the base of the glass, and an old egg will float.
  • Older eggs will have more air, which will cause them to float. An egg, which is floating above the surface must not be kept or used, you should throw it away.

Centering the Yolk

  • If you want to make deviled eggs, there are some things that you will have to do for centering the yolks before you cook them. You will have to turn the carton of eggs on its side inside the refrigerator a night before you want to cook the eggs.
  • Another method to store the eggs inside the refrigerator with the pointed side facing downwards. This will help in keeping the yolk centered.

Cooking Methods

  • Cook according to your liking. There are many methods to cook an egg inside the shell. Before you cook, eggs should be removed from the refrigerator two hours prior to cooking, so that the eggs will not crack when you are cooking them.
  • If you want to avoid rubbery whites and green yolks, then the eggs should never be cooked in rolling boiling water. You can cook them over the stove for making soft, hard or mollet eggs.

Soft cooked

  • For soft cooked egg on the stove, you will have to put the eggs inside a large pan and allow them to lie comfortably. Fill the pan with cold water just about one inch above the eggs and put them on medium heat. Once the water begins to boil, keep the eggs inside the water for nearly one minute until they are slightly white on the inside. If you want firmer whites, then keep them on heat for more 30 seconds.

Mollet

  • Mollet eggs are nothing but medium cooked eggs on the stove. Repeat the entire method of soft cooked eggs, but keep these eggs for three extra minutes once the water has started to simmer. Once the water starts boiling, you must lower the heat.

Hard cooked

  • For hard cooked eggs repeat the entire method of mollet eggs, but for hard-boiled eggs, you will have to cook them for six minutes, once the water has started to simmer.

Coddling

  • Coddling is one the cooking methods suggested by the American Egg Board. For this, you will have to boil a large pan of water with eggs according to the stovetop method. When the water starts to boil, take the pan out from heat and cover the pan with a lid.
  • If you want soft cooked eggs then you must take out the lid after five to six minutes. If you want mollet eggs, then you must remove the lid after six to seven minutes. For hard-boiled eggs, you must take out the lid after fifteen minutes.

Cooling

  • Once the eggs are done, you must allow them to cool immediately. In any kind of cooking method, you must drain the hot water and keep the pan under cold running water for nearly five minutes.
  • If you want then you can shock the eggs in a bowl of ice-cold water as well with ice cubes in it. Cool the eggs immediately, after cooking this method will prevent them from being cooked further.

Peeling

  • If you wish to consume the eggs right away, then you must start peeling the eggs under cold running water. This will help in infiltrating between solid egg whites and membranes of the shell, which will make it even easier to peel without causing any damage to the egg.

Storing peeled eggs

  • You can keep unpeeled hard-boiled eggs for nearly one week. You must store them in a plastic bag for preventing them from absorbing odor, and keep them inside a refrigerator until you want to use them.

How to Cook Scrambled Egg

Scrambled egg is a food item, which is prepared from the flattened whites and yolk of the egg. Scrambled eggs are generally made with the chicken egg. Flattened eggs are placed into a hot oiled saucepan and stirred regularly, creating curds as they thicken.

Raw eggs are beaten to mix the white portion of egg with yolk to form a uniform liquid. Liquids like, stock, butter, water, cream or oil can be mixed in the beaten egg to form a softer texture. The quantity of liquid, which is added into the beaten egg, is around 3tbsn liquid per egg. You can also include salt, pepper or other spices to add some flavor to your scrambled egg.

When the flattened eggs are transferred into a hot oiled saucepan, it thickens straight away. The temperature of the stove is turned down and the egg is stirred continuously as they cook. If you will stir the egg continuously, then it will form small and spongy curds.

Once the liquid of the egg is set completely, add some more ingredients like, herbs, ham or cheese in you scrambled egg. The eggs must be undercooked to some extent, when eliminated from the stove, as the egg will carry on setting.  If you follow this method, then the texture of the egg should be humid with soft uniformity. How to Cook Scrambled Egg
Things required:
7 to 10 large eggs
7 teaspoons low-fat milk
4 dashes of salt
2 Tablespoon butter for frying

Instructions:

  • To cook scrambled egg, first of all you will have to heat a big non-stick frying pan. Heat it on average temperature. You can use a 14 inch frying pan, if you are cooking 10 eggs. Do not put butter until your pan is ready.
  • Now, break the eggs in a large mixing bowl and start beating it. You can beat the eggs by adding milk and salt to it. Keep beating the eggs for at least 4 minutes.
  • You can also mix the eggs with milk, salt and pepper in blender and mix it for around 30 seconds. Now, let the solution and foam settle for two-three minutes.
  • Now, thaw the butter in the frying pan. Let the butter get liquefied completely in the pan, and then add the egg solution.
  • You should not stir the solution straight away. Wait until the first intimation of setting starts.  Now stir the eggs continuously by using a flat wooden spoon.

    Keep stirring the eggs until the eggs begin setting. You can break up the large parts with the side of your spoon.  Now, toss over the entire eggs. Let the eggs cook for approximately 30 seconds longer. Now, your scrambled egg is cooked; remove it from the heat and serve it hot. You can also add some pepper to enhance the flavor.

    Tips and warnings:

You can also use Soya milk to cook scrambled eggs because it is the best ingredient for this dish. Soya milk enhances the flavor of scrambled eggs.
